One of my favorite winter vegetables

One of my favorite winter vegetables are Brussel Sprouts.  Growing up like any typical kid, I hated them…but over the years I have grown to love them!  Like any Diabetic, Eating a diet rich in vegetables is important, so find some veggies you love…if brussel sprouts aren’t your thing…this recipe can be used with just about any vegetable… just switch them out!

What you’ll need:

Brussel Sprouts, Salt, Pepper, Garlic Salt, Olive Oil, All purpose Seasoning (i.e. I recommend McCormick’s Perfect Pinch, Original All-Purpose Salt Free)


Preheat oven to 400 degrees F (205 degrees C).

Cut Brussel Sprouts in Half, or leave whole, depending on size.

Place Brussels sprouts, olive oil, salt, pepper, all-purpose seasoning in oven save dish, stir to coat all Brussel sprouts in olive oil seasoned mixture.   

Roast in the preheated oven for 30 to 45 minutes, Stirring every 10-15 minutes for even browning. Reduce heat when necessary to prevent burning. Brussels sprouts should be darkest brown, almost black, when done. Adjust seasoning to taste. Yum!!
