Baked “Fried” Okra…a Winter Staple!

Baked “Fried” Okra…a Winter Staple!

What you’ll need:

Okra (frozen or Fresh), Salt, Pepper, Garlic Salt, Olive Oil, All purpose Seasoning (i.e. I recommend McCormick’s Perfect Pinch, Original All-Purpose Salt Free) Bread Crumbs, 1 Egg, Water & Flour

Directions:

Preheat oven to 400 degrees F (205 degrees C).

Prepare Okra with Flour, Egg, and Bread Crumb wash.  I find it easiest to use a ziplock bag and do a “shake and bake” style for the Flour and bread crumbs, one bag for each, egg best in a small bowl. 3 dipping stations total.  About 7 pc at a time, dip okra first in Flour, remove….next cover in egg (beaten mixed with a dash of water) lastly cover in bread crumbs.

Place okra in oven safe dish.  Cover with olive oil, salt, pepper & all-purpose seasoning.  Bake, and stir every 10 - 15 minutes for even browning. Cooked untill golden brown.

Presidential Diabetes

Just a little fun fact for Presidents Day Weekend….  There has only been to date, one U.S. President that has been known to live with Diabetes.  This was Warren Harding.  Warren Gamaliel Harding (November 2, 1865 – August 2, 1923) was the 29th President of the United States (March 4, 1921 – August 2, 1923), a Republican from Ohio who served in the Ohio Senate and then in the United States Senate, where he played a minor role. Among Diabetes, he suffered from other conditions such as Nervous breakdowns, mumps, nasal allergy, hypertension, obesity, stroke and a heart attack.

Too Sweet

Life is hardly sugary sweet when you’re a card-carrying member of the diabetic club—whether you’re diagnosed with the disease yourself or have a loved one who is. But if laughter is the best medicine, then Too Sweet is just what the doctor ordered: a candid, humorous, and empathetic guide to living with diabetes, written by a life coach with twenty years of experience as a type 1 diabetic.
Born with a hatred of needles and a love of sweets, Laura Kronen shares a wide variety of personal insights relating to the diabetic life. They are often comforting and sometimes embarrassing, but always brutally honest. From addressing common diabetic myths to detailing highs and lows and dealing with that pesky “disease” label, this refreshing and lighthearted look at type 1 and 2 is one that anyone affected by diabetes will be sure to find inspiring and relatable.
