Veggie Chilli a Memorial Day Essential

Santa Fe Veggie Chili is a festive hearty dish perfect for large gatherings!
  1. In a large, non stick, stock pot heat olive oil. Saute jalapeno pepper, onion, and red and yellow peppers over medium heat until onions are translucent (5-8 minutes).

  2. Add the remaining ingredients and slowly bring to a boil. Cover pot and simmer on low heat for 20 minutes. Serve hot. Chili tastes best when allowed to sit overnight. Refrigerate chili in covered pot overnight. Bring to a boil over a low heat, stirring constantly. Serve with SPLENDA®Hearty Corn Cakes.

70's Bag

The decade of the 1970’s gave the world many “Hip” and “Groovy” things. Unfortunately, the 70’s also brought us the mass introduction of the unsustainable and unappealing one-use plastic shopping bag.

While innovation and convenience are most of the time beautiful things, it’s important to consider the impact “progress” can make on the world around us.

Delicious Summer Slaw

The homemade dressing makes all the difference in this crunchy coleslaw salad that takes no time to put together.
  1. Blend mayonnaise, SPLENDA® No Calorie Sweetener, Granulated, onion, lemon juice, vinegar, celery seed, salt and pepper in a large bowl.

In 1998, the Food Allergy & Anaphylaxis Network, now FARE, created Food Allergy Awareness Week to educate the public about food allergies, a potentially life-threatening medical condition. This year's awareness week falls on May 10-16, 2015, but we will have activities and ways to get involved throughout the entire month of May for Food Allergy Action Month. This is a special opportunity to shine a spotlight on food allergies and anaphylaxis. There are many easy ways you can get involved in raising awareness, educating others and inspiring action.

Strength Training

Strength training (also called resistance training) makes your body more sensitive to insulin and can lower blood glucose. It helps to maintain and build strong muscles and bones, reducing your risk for osteoporosis and bone fractures.

The more muscle you have, the more calories you burn – even when your body is at rest.

Preventing muscle loss by strength training is also the key to maintaining an independent lifestyle as you age.

We Recommend: doing some type of strength training at least 2 times per week in addition to aerobic activity.

Below are examples of strength training activities:

  • Weight machines or free weights at the gym
  • Using resistance bands
  • Lifting light weights or objects like canned goods or water bottles at home
  • Calisthenics or exercises that use your own body weight to work your muscles (examples are pushups, sit ups, squats, lunges, wall-sits and planks)
  • Classes that involve strength training
  • Other activities that build and keep muscle like heavy gardening

Sugar Free easy Baked Apples

Let the kids help mix the filling and fill the apple before baking. Enjoy as an easy dessert or side dish with pork.
  1. Preheat oven to 350 degrees F.

  2. Wash apples and core using an apple corer. Place in a 9X13-inch baking pan.

  3. Mix together SPLENDA® Granulated Sweetener and cinnamon. Fill each apple with the mixture and then top each apple with a small dot of margarine. Cover with aluminum foil and bake in preheated oven 45 to 50 minutes or until slightly soft.

Asthma & Allergy Awareness Month

Supported by the Asthma and Allergy Foundation of America (AAFA), this awareness event is held throughout the month of May to coincide with the peak season for asthma & allergy sufferers.

People who suffer from asthma and allergies often experience noticeable physical symptoms during this month. An awareness campaign in May is an appropriate time to educate friends, family, co-workers and members of the public about asthma and allergies.

In the US, approximately 25 million people have asthma of which almost 7 million are children. In 2010, almost 13 million people reported having an asthma attack (just over half of the total number of people with this condition). There is a higher incidence of asthma emergencies, hospitalizations and death in African Americans compared to Caucasians. Puerto Ricans are also disproportionally affected. By educating the public about asthma and allergies it is hoped that more people will take early action to deal with any symptoms. Taking early action, which in many cases may be preventative action, can improve the quality of life of asthma and allergy sufferers. Time and money spent on medical intervention can also be reduced.

The Signs And Symptoms Of Asthma & Allergies To Be Aware Of

Asthma symptoms include coughing, wheezing, shortness of breath, and a tightness in the chest. Symptoms of allergies can vary in severity. Mild allergy symptoms include congestion, skin rash, and itchy water eyes. Moderate symptoms include difficulty in breathing, and itchiness.

Severe asthma symptoms can begin with itching of the eyes and face, but soon progress to swelling, causing breathing difficulties, cramps, diarrhea, and vomiting. Confusion and dizziness are further symptoms of asthma.

It is hoped that this awareness event will educate more people about asthma triggers which bring on symptoms of asthma, and how asthma can be controlled. Environmental triggers of asthma attacks include passive smoking, molds, cockroaches, pet hair, and dust mites. Combined with adequate medical treatment, these environment triggers can be controlled enabling people with asthma to live active and healthy lives.

May is Celiac Awareness Month!

Celiac Awareness Month is an event held throughout the United States each May and is supported by the National Foundation for Celiac Awareness (and other relevant organizations).

This event raises awareness about celiac disease, and highlights the work of the National Foundation for Celiac Awareness (NFCA) which provides support for those affected. The NFCA, in collaboration with scientists and other organizations, also supports research into celiac disease.

What Is Celiac Disease?

Celiac disease is a genetic autoimmune disease which damages the small intestine. The small intestine is part of the gut which digests & absorbs nutrients from food. When the small intestine is damaged, the rate of nutrient absorption from food is reduced. Celiac disease can affect people in many different ways and symptoms vary in severity. Due to the large number of possible symptoms, there are 3 recognized types of celiac disease.

In many cases, where there are no noticeable symptoms, a person has 'silent coeliac disease'.

People with 'minor celiac disease' have minor symptoms. These can include a wide range of symptoms such as indigestion, bloating, weight loss, and mild abdominal pain.

People with 'major celiac disease' have severe symptoms which can be of great discomfort. These may include 'minor celiac disease' symptoms which are more severe, and other symptoms such as stomach cramps, diarrhea and muscle spasms.

People with celiac disease are sensitive to gluten which triggers these symptoms. Gluten is a protein found in grains such as barley, wheat and rye. Consumption of gluten can affect the whole body.

Celiac Awareness Month also raises awareness about sensitivity to gluten.

Treatment for celiac disease and gluten intolerance is straight forward; those affected are advised to avoid foods which contains gluten. This awareness event helps educate and inform the public about gluten free foods. However, it is not always easy to determine if a food item is gluten free; this event also encourages appropriate labeling on food items.
